Because the course at CSCA is under the direction of a French Pastry Chef, we learn all French pastries and techniques.
What does this mean? I've never heard of 95% of what we make, and even if I have, I can't pronounce it correctly.
So, last night, one of my classmates tells me she was looking up the recipes ahead of time, it didn't surprise me. It's not like you are googling 'cake'.
