Pastry School Fail: Nougatine Edition

I wasn't really sure what nougatine was when I signed up to make it. But I figured, I'm attending school to learn and challenge myself (I have the chocolate chip cookie recipe down pat, such that I can, and have, made them drunk on several occasions).

So, a nougatine shaped into a cone and filled with mousse sounded fancy-schmancy and like something I could impress you all with with my photos of the final product. The desire outcome looks similar to this:


Instead, I ended up with this:
Sugar, corn syrup, nuts; off to a promising start
Disaster Strikes!
If I never see nougatine again, it will be too soon.
